Smoothie Parfaits

Parfait is a French word that literally means “perfect.” While Merriam-Webster may define “perfect” as a cold dessert made of layers of fruit, syrup, ice cream and whipped cream, I see it more as the ideal combo of whole fruits layered between blended fruit smoothie mixtures.

Following a 100% plant-based, raw diet, I admit that I some days I struggle to meet my caloric goals for the day (2,500). Other days, I really amaze myself with the amount of food that I can consume in one sitting, which is where these smoothie parfaits come in. They are so delicious that no matter how full I am, I can always keep going.

When I know it’s going to be a long day ahead, this is my typical go-to breakfast. However, I’ll occasionally whip up a smaller version for an after lunch or dinner dessert and I would never hesitate to use them to entertain. With that said, I invite you to welcome your taste buds to the perfect raw party:

TROPICAL TWIST:

Prep Time: 10 minutes

Servings: 1 (Approximately 24 oz.)

  • Ingredients:
  • 1 cup papaya
  • 1 fresh, peeled mango
  • 1 fresh  banana
  • 1 frozen banana
  • 1 cup whole strawberries (stems are edible so keep ’em on to save time and nutrition)
  • 1/3 cup sliced strawberries
  • 1 cup frozen cherries (use fresh if in season)
  • 1/3 cup fresh blueberries

Directions:

1. For the bottom layer, blend the papaya, 1/2 of the mango, and the frozen banana on high until smooth.  Fill a glass about half way with this blend.

2. For the middle fruit salad layer, mix slices of 1/2 of the fresh banana, the strawberry slices, and the other half of the mango (chopped). Add this mixture to the glass.

2. For the top layer, blend whole strawberries, cherries, and the other half of the fresh banana on high until smooth. Fill the remainder of the glass with this mixture. Sprinkle blueberries on top to finish.

MANGO BERRY BLISS:

Prep Time: 15 minutes

Servings: 1 (Approximately 24 oz.)

  • Ingredients:
  • 2 cups fresh blueberries + about 10 extra for the top
  • 2 cups fresh strawberries + about 2 whole strawberries for the top
  • 1.5 cups fresh chopped mango
  • 1 fresh banana
  • 1 cup whole strawberries (stems are edible so keep ’em on to save time and nutrition)
  • 1/3 cup sliced strawberries
  • 1 cup frozen cherries (use fresh if in season)
  • 1/3 cup fresh blueberries

Directions:

1. For the bottom layer, blend blueberries , strawberries,  and cherries on high until smooth. Pour half of the mixture in a glass and set the other half aside in a separate bowl or glass. Wash out the blender.

2. For the middle, layer 1 sliced banana on top of the strawberry/blueberry blend. Then blend 1 cup of chopped mango on high until it is a smooth purée and pour on top of the sliced banana. Continue layering with the remaining 1/2 cup chopped mango.

2. For the top layer, fill the rest of the glass with the rest of strawberry/blueberry/ cherry blend that was set aside. Top the parfait with the extra whole blueberries and sliced strawberries.

  1. oh yummy 🙂 Would be great with a sweetened vanilla whipped coconut meat layer also. Raspberries, agave (or maple syrup or yacon) and lemon juice blended are delicious also.

  2. Looking at the Mango Berry Bliss, I can’t seem to see where the cherries come in. Am I blind?
