Raw Summertime Mocktails

“So you’re 22 and you really don’t drink alcohol?!?! What the *#^%@!”

Yes, you read right. Since following a low-fat raw vegan lifestyle, I’ve ditched the alcohol and have only felt better in doing so. Gone are the days of hangovers and feeling so sick that hours are spent lying around doing next to nothing but wallow in nausea . This is not to say that I was  a heavy drinker before this lifestyle but I did go to college and it was always around. Even though t’s still around, I just choose not to drink it– I’ll take a sweet, healthy mocktail instead. I don’t just blend these up when 5:00PM rolls around either– they are perfect for breakfast or lunch!

MANGORITA

Prep Time: 10 minutes

Servings: Two mocktails (Approximately 4 cups)

Ingredients:

  • 2 Frozen bananas
  • 3 Fresh Mangos, peeled and cubed (Champagne/ Ataúlfo mangos are best since they are the creamiest)
  • 1 Fresh Peach
  • Juice of 1 Lime
  • 1 TSP Fresh lime zest
  • 1 Cup Ice
  • Water or coconut water as needed

Directions:

1. Place all of the ingredients in a blender and blend until completely smooth. A high-speed blender like a Vitamix works best for reaching a smooth, creamy consistency.

Piña Rawlada

Prep Time: 10 minutes

Servings:  Two mocktails (Approximately 5 cups)

Ingredients:

  • 2 cups fresh pineapple
  • 1.5 cups frozen pineapple
  • Water and meat from 1 Young Thai Coconut
  • 1/2 of a raw vanilla bean or 1.5 TSP raw vanilla powder
  • 1 Cup ice
  • Optional for added sweetness: 3 pitted Medjool dates

Directions:

1. Place all of the ingredients in a blender and blend until completely smooth. A high-speed blender like a Vitamix works best for reaching a smooth, creamy consistency.
